BEER NERD ALERT: There is a flavor in Beer widely

BEER NERD ALERT: There is a flavor in Beer widely regarded as the “Oxidation” flavor. This is called Trans-2-Nonenal and it smells and taste papery. A lot of craft beer people that I run into have the formation of this flavor wrong. Contrary to popular belief, it doesn’t form because of high Dissolved Oxygen levels during packaging. Precursors are formed during wort production through the oxidation of fats in the mash. Lipoxygenase Enzymes found in malt are the main culprit. As a side note, the Japanese have been breeding malt to reduce these enzymes for more than a decade. Anyway, An interesting experiment was performed and published in the ASBC journal with two low oxygen bottles (less than 1 ppm) where one was injected with 96 ppm of oxygen and the other one left alone. After analyzing the contents using a Gas Chromatograph there was no change to the levels of Trans-2-Nonenal between bottles. This isn’t to say that the levels in the bottles didn’t rise. The levels did indeed rise which were due to NON-Oxidative pathways . These are things like time, temperature and pH. Store your beer cold and drink it fresh. BEER NERD OUT ******#cicerone
